I always have a ton of Halloween candy left over so I decided one year to use the left over candy in my holiday baking and here is one of the recipes that my friends and family enjoy.
peanut butter cup cookies
1 3/4 cup of all-purpose flour ( I use gluten free)
1/2 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup of peanut butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons of milk
and about 30-40 miniature Reese’s peanut butter cups, unwrapped (the fun part for the kids just make sure the don’t sneak any)
pe-heat the oven to 375 degrees F(190 degrees C ). cream together the butter , sugar , peanut butter and brown sugar tell well combined . beat in the eggs, vanilla and milk . add the flour and baking soda. mix well .
don’t forget to grease the muffin tin ( might be easier if you are cooking with kids) or parchment on a cookie sheet
shape the dough into 1 inch balls and place into a mini muffin pan.bake at 375 for 8 minutes. Remove the pan from the oven and immediately press a mini peanut butter cup into each ball( please supervise your children if they our helping the pan is very, very hot . Cool and carefully remove the peanut butter cookies from the pan .
Notes : before baking the dough you can add sprinkles for a more festive look.
