gingerbread cookies . i love them . i like this recipe because the spices are not over powering i love gingerbread cookies but the ginger bothers me normally but not with this recipe.
preheat over 350 degrees bake for 6- 7 minutes for soft cookies 8-9 for crispier cookie
1/2 cup molasses
3 cups of flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon backing soda
1 tablespoon ground ginger
1 teaspoon cinnamon
1/4 teaspoon clove
6 tablespoons butter room temp.
3/4 cup brown sugar (packed)
2 teaspoons vanilla extract
1.in a medium bowl, mix together the molasses, brown sugar, vanilla and butter until smooth. Combine the flour, baking soda, baking powder, ginger, cloves and cinnamon, stir them into the wet mixture until all of the dry is absorbed. divide the dough in half cover and form into round disc . i chill 1 of the halves and used the other (let the dough you are going to use set on at room temperature for 1 hr .
2.Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. flour top and bottom of the dough .Cut out into desired shapes. Place cookies 1 inch apart onto un-greased cookie sheets.if you have parchment paper put it on the cookie sheet make clean up easier
3.Bake for 8 to 10 minutes(for a crispy cookie) soft 6-7minutes in the preheated oven. Remove from the cookie sheets to cool on wire racks.
