day 5 ginger cookies

tis the season to bake gingerbread but since i already made gingerbread men i though i would try a ginger cookie covered in sugar LOL . this cookie is crisp on the outside and soft on the inside just how i like it. i hope you enjoy another ginger recipe and don’t forget to bake with someone this holiday season my 8year old daughter helped make this one.



2 1/4 c of flour

2 teaspoons ground ginger

1 teaspoon baking soda

1 teaspoon ground cinnoman

1/2 teaspoon ground clove

1/2 teaspoon salt

3/4 c vegetable shortening

1 c coconut sugar

1 egg

1/4 cup sugar (for rolling the dough in)


  1. preheat the over 350  degrees
  2. in a medium bowl, whisk together the flour, ginger,soda, cinnamon, clove and salt
  3. in a large bowl, beat together the shortening with a mixer on medium for 30 seconds . add the coconut sugar  and beat till combined.beat in the egg and molasses. then the flour mixture.
  4. shape the dough into 1-inch balls and roll in the sugar. place them on an undressed cookie sheet. 1 1/2 inches apart.
  5. bake for 8-9 minutes
