day 9peppermint peanut butter cups

omg these peanut butter cups a amazing . they are teeth hurting sweet and declishes

i am not one for words so let’s get into the recipe



1/2 c of peanut butter  (1 cup)

1/4 c powdered sugar (1/3 cup)

1/2 teaspoon vanilla extract

1 1/4 cup of chocolate chips i used(1/2 dark and 1/2 milk chocolate)

4 square of peppermint bark white chocolate( less if you are drizzling)


  1. In a medium bowl mix together the peanut butter, powdered sugar, vanilla extract, and salt. It will form a sort of soft dough.

  2. In a double boiler melt the chocolate chips. If you do not have a double boiler, you can use my method, and put a heat safe bowl over a pot. The bowl should be big enough that it sits in the pot with a few inches of room for water underneath. Fill the pot with an inch or two of water, put the bowl on top and add your chocolate chips. Bring the water to a boil and gently stir the chocolate chips until completely melted, then remove from heat.

  3. To make the vegan peanut butter cups, use a chocolate mold or cupcake liners. Add just enough chocolate to the mold or cupcake liners to just cover the bottom.

  4. Take a piece of the peanut butter dough and form a disc that is just smaller than the mold so that there is room for chocolate to go around the edges. Pop the peanut butter discs into each mold.

  5. Now finish by pouring more chocolate overtop so that the chocolate goes around the sides of peanut butter dough and covers the top. Repeat until you run out of chocolate and peanut butter dough.

  6. Put in the fridge to cool and set for about 30 minutes.

  7. add the melted peppermint chocolate no top you can drizzle or add a additional layer. put back in the freezer .Once the chocolate has solidified again, you can pop them out of the molds, or just trim the paper liners if you want to leave them protected. Store in an air-tight container in your cupboard.


notes : after eating all the peanut butter cups I thought they could use more filling so I doubled the recipes  I also covered the whole top in peppermint chocolate and tried to reduce the thickness of the chocolate
