Quinoa bowl

To day we went grocery shopping so that make it meal prep day .

I have wanted to buy glass food storage containers for a while so since i was making my meals for the week it was a good time to do it.

Ingredients

1 cucumber

1 avacodo

1 container of hummus

1 tomato

Chickpeas

Salt and pepper to taste

1 lemon

4 c leafy greens

1/2c quinoa

Directions

Put 1/2 dried quinoa in 1 c of water bring to a boil simmer, covered for 15 minutes.

Peel and cut half of your cucumber into small pieces. You will need 1/4 c for 4 bowl.

I used canned garbanzo bean . I nomally would soak chickpeas overnight and cook them but i Didn’t have any .

Cut up you tomato i used about 4 to5 cherry tomatoes. It all depends on how small you cut your veggies.

Now you are going to need about a 2 cup container to assemble your ingredance into.

1 c of leafy green , add the 1/4 chickpeas,cucumber,tomato ,avacodo.

Then add 1 tablespoon hummus

1/4 of lemon wedge you can put the wedge in for later or squeeze it on now.

I would also wait on your avacodo tell the day you eat your salad because they turn brown once cut.

Salt and pepper to taste
