Vegan salad bowl

I have been struggling a little with my new way of eating. I have gained weight since I have switched to only eating fruit and veggies with a little rice or quinoa in my dinner. I don’t drink coffee with all the sweeteners that I use to sugar, half &half, sweetened condensed milk.I know it takes time to your body to adjust or maybe that’s what I am telling my self. let’s get to the recipe.

Makes 3 bowls

Ingredients

3 slices tempeh per bowl

1/3 rice (cooked)

1/4c sweet potato

2 carrot shredded

1/2 purple cabbage

1 c baby spinach

1c baby arugula

1/4c shredded radish

1/4c apple or pear

I did add leftover cooked peppers and onions

Dressing

1 Tablespoons Almond butter

1Tablespoon almond milk

1/2 Tablespoon soy sauce

1 teaspoon rice vinegar

Directions

1. Cook you tempeh while that cooks. Cut and shred all ingredients

I did use blueberries in my salad but I didn’t like them. I think pears on apple would be better.

2. Make your dressing

1 Tablespoons Almond butter

1Tablespoon almond milk

1/2 Tablespoon soy sauce

1 teaspoon rice vinegar

If you add your dressing now mix it well. When I added mine it hardened up, i just popped it in the microwave to warm it.

3. Assemble your salad .
