Vegan salad bowl

I have been struggling a little with my new way of eatting . i have gained weight, since i have switch to only eatting fruit and veggies with a little rice or quinoa in my dinner. i don’t drink coffee with all the sweeteners that i use to sugar,half &half, sweetened condensed milk .I no it takes time to you body to adjust or maybe that’s what i am telling my self. lets get to the recipe

Makes 3 bowls

Ingredients

3 slices tempeh per bowl

1/3 rice (cooked)

1/4c sweet potato

2 carrot shredded

1/2 purple cabbage

1 c baby spinach

1c baby arugula

1/4c shredded radish

1/4c apple or pear

I did add left over cooked peppers and onions

Dressing

1 Tablespoons Almond butter

1Tablespoon almondmilk

1/2 Tablespoon soy sauce

1 teaspoons rice vinager

Directions

1. Cook you tempeh while that cooks. Cut and shred all ingredients

I did use blueberries in my salad but i didn’t like them . I think pears on apple would be better.

2. Make your dressing

1 Tablespoons Almond butter

1Tablespoon almondmilk

1/2 Tablespoon soy sauce

1 teaspoons rice vinager

If you add your dressing now mix it well . When i added mine it harded up ,i just popped it in the microwave to warm it .

3. Assemble your salad .
