it is such a challenge sometime to feed your kids healthy food, and trying to feed them at all. I know I have a hard time finding the balance. my daughter loves Nutella but it’s not the healthiest for her and with her younger sister watching her older sisters every move I don’t really want her to be eating a bunch of processed crape so I tried to come up with something my kids would love and want to eat. they have a big sweet tooth just like I do, I ended up using dates and maple syrup to add sweetness to this nut butter, I love dates I could eat a whole bag but my girls aren’t a big fan of them the thing is if you don’t tell them what’s in it .it’s most likely they won’t know or care its chocolate and that’s what the see.
chocolate pecan butter
2 c pecans
3/4 c maple syrup
1/3 cocoa powder
1 tablespoon vanilla extract
1/2c milk your choice of milk
- put the pecans in a high-speed blender, or food processor, blend till smooth
- add the milk, dates, cocoa powder and vanilla extract, blend tell incorporated keep it in an airtight container in your refrigerator.
